Peach Compote! 

Cut up your peaches, add them to a pan with a little liquid - water or wine -  to get the juices flowing. Cook them over simmer for about 3-5 minutes until they are good and juicy. Add a little Peach Pie Spice (1/2 teaspoon per peach). Bring to a quick boil to thicken, and remove from heat. BOOM! You have homemade Peach Compote ready to add to your ice cream, smoothy, yogurt, granola, or even a cocktail for a hit of peach flavour.
