This rich and creamy Alfredo sauce features the innovative Spicy Guac Spice Blend from Lex’s Pantry, which combines four spicy peppers and complementary seasonings. The sauce is quick to prepare using butter, cream, and Parmesan, enhanced with a zesty, spicy kick perfect for pasta, chicken, or fish. Want more kick, throw in a bit more Spicy Guac. Less kick? Try our Guacamole seasoning (not the Spicy one).
Want zero kick? Use our Memphis Zero or our Lakeview Garlic Lovers seasoning instead. They all work beautifully.
Ingredients

1-2 tsp Spicy Guac Spice Blend

2 Tbsp butter
-
1 cup cream - you can use anything from 5% to heavy cream. Lex usually used 5%.

1/2 cup grated Parmesan cheese -or to taste (iwhich means throw in more if you want to!)
Less Spicy Alternatives
Directions
In a saucepan, heat the butter over medium heat until melted.
Add Spicy Guac Seasoning to the butter, and stir to combine - about 30 seconds until it sizzles a bit.
Add the heavy cream and stir to combine.
Bring the mixture to a simmer, then reduce the heat to low and let things heat up and reduce a bit.
Gradually stir in the Parmesan cheese, allowing it to melt into the sauce.
Taste & season with a little extra Spicy Guac if you want (or salt & pepper if the heat is perfect)
Continue to cook the sauce on low heat until it reaches your desired consistency.

- cook fettuccine following the instructions on the package (usually for dried, cook 7-8 minutes).
- add a splash or two of the pasta water into the sauce (it will emulsify and make the sauce extra creamy and thicken it a bit too.)
- add fettuccine directly into the sauce and combine over low heat for 2-3 minutes.
- If things get too thick, add a splash or two more of the pasta water.
- Serve and garnish with a sprinkle of Spicy Guac for a fun texture kick.
Chicken Fettucine Alfredo:
- Add pre-cooked diced chicken to the butter and spice mix before adding cream, then proceed as above.
Saucy Trout:
- make the Creamy Spicy Guac Alfredo Sauce and let it rest while you season your trout with salt
- pan fry your trout in a hot pan, skin side down first.
- plate trout individually or on a shared platter - Lex likes to have a steamed leafy green like swiss chard or spinach under the trout.
- cover with Creamy Spicy Guac Alfredo Sauce and serve.
