What is the Spicy Guac Spice Blend?
Spicy Guac spice blend is a blend of spices and herbs that combines the heat of 4 different spicy peppers with the perfect seasoning to make guacamole. However, it is wildly versatile and works with cream sauces, and a range of veggies, fish and chicken. This seasoning adds a bold and zesty flavour to any dish, making it a versatile ingredient for your kitchen.
Ingredients:
- 1-2 teaspoon Spicy Guac Spice Blend
- 2 tablespoons butter
- 1 cup cream - you can use anything from 5% to heavy cream. Lex usually used 5%.
- 1/2 cup grated Parmesan cheese - or to taste (i.e. throw in more if you want to!)
Instructions:
- In a saucepan, heat the butter over medium heat until melted.
- Add Spicy Guac Seasoning to the butter, and stir to combine - about 30 seconds until it sizzles a bit.
- Add the heavy cream and stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low and let things heat up and reduce a bit.
- Gradually stir in the Parmesan cheese, allowing it to melt into the sauce.
- Taste & season with a little extra Spicy Guac if you want (or salt & pepper if the heat is perfect)
- Continue to cook the sauce on low heat until it reaches your desired consistency.

- season your trout with salt
- pan fry your trout in a hot pan, skin side down first.
- plate trout individually or on a shared platter - Lex likes to have a steamed leafy green like swiss chard or spinach under the trout.
