Tourtière Recipe

A holiday tradition, Tourtière is a French Canadian meat pie dish. There are many meat pies but Tourtière has deep roots in Canada. Usually made with minced pork, veal or beef and potatoes, it's not uncommon to find it made with wild game. Perfect for Christmas Eve, New Year's Eve or anytime you are thinking about a Cabane au Sucre! 

Ingredients

  • 1/2c - 3/4c Tourtiere Spice Blend 
  • 1kg ground meat - pork and/or veal is traditional, beef, venison, rabbit, turkey, chicken.  
  • 1.5c stock or water.

Instructions

Simple Tourtière 

  • Brown your meat 
  • Drain off the fat. 
  • Add Tourtière Spice Blend From Lex's Pantry and stock.
  • Combine until fully mixed and a thick gravy consistency is reached. (Add more water or stock if required)
  • Fill pie shell and top with pie crust. Cut 4 vents or slice slits
  • Bake in preheated oven at 400°F until the crust is fully cooked and meat is bubbling (30-35 minutes for a 9" pie)
  • Rest for 10 minutes before serving. 
  • Serve with a sweet and tangy sauce or pickle like chow chow or ketchup (seriously, it's the go to sauce for Tourtière). And some peas or salad along side.   

 

Slightly More Complex but Still Simple Tourtière 

  • Finely dice and cook 2 medium potatoes reserve the water
  • Sauté 2 medium onions
  • Brown your meat 
  • Drain off the fat. 
  • Combine meat, potatoes and onion with 1/2 of the potato water
  • Add Tourtière Spice Blend From Lex's Pantry and 1c stock.
  • Combine until a thick gravy consistency is reached. (Add more potato water or stock if required)
  • Fill pie shell and top with pie crust. Cut 4 vents or slice slits
  • Bake in preheated oven at 400°F until the crust is fully cooked and meat is bubbling (30-35 minutes for a 9" pie)
  • Rest for 10 minutes before serving.

Try Something New

  • make individual Tourtière or Tourtière handpies
  • Mix Tourtière Spice with a 50/50 mix of ground pork and beef to make Tourtière burgers
  • Use Tourtière Spice in your sausage stuffing
