Our Shakshuka Quiche is a layered dish with the traditional look of eggs on top. But you can always mix everything together and top it with cheese. We won't judge. But we may ask for an extra slice.
Ingredients

1-2 Tablespoons Shakshuka Spice

1 large sheet puff pastry (Or pie pastry)

6eggs - 3 for the bottom layer, 3 for on top

1/3 cup heavy cream
-
1 cup crushed tomatoes or tomato sauce
-
2-3 Tablespoons tomato paste
-
1/2 cup of roasted peppers - a little char is good
-
1/4 cup of sauteed or roasted onion - a little char is good
Optional Add-ins (to your taste)

1 cup feta or goats cheese,
cooked sausage,
extra veggies,
sliced or diced potatoes
Directions
preheat oven to 350°F (175°C).
wipe inside of 9-inch pie plate with olive oil.
place pastry in the pan, if using puff pastry, let the edges hang out for extra dipping crust.
drizzle roasted peppers, onions and any extra veg or meat you are adding with a bit of olive oil and toss
arrange peppers, onions and add-ins the bottom of the pastry for layer 1.
Mix 3 eggs with cream and pour over the bottom of the pastry for layer 2.
layer on any cheese you are using onto the egg mixture for layer 3
mix the Shakshuka spice into the tomatos and tomato paste, thoroughly pour into the pastry shell for layer 4
egg-wash the edge of the pastry or if using puff pastry, brush the exposed puff pastry with olive oil, so it doesn't burn.
bake in the oven at 350°F for about 35-40 minutes, on a lower oven rack. remove from the oven,
make three indentations and crack the remaining eggs into the indentations for that traditional shakshuka look
This is a great time to taste the sauce and optionally sprinkle a little extra Shakshuka spice on each egg.
Return to the oven until your eggs are done to your liking.
Remove from the oven and let sit for 5-10 minutes. (Great time to prep that fresh salad)
Recipe Note
For Picnics
For a sliceable cold version: Scramble the last 3 eggs and pour onto the quiche, cooking until firm.
Serving
Garnish with fresh herbs, micro greens and a drizzle of olive oil.
Serve hot with crusty bread or pita, a big green salad.

if you don't have pre-cooked onions and peppers:
heat a cast iron pan to high, toss in red peppers and sliced oniondrop tempature to medium to cook until soft.
For a vegetarian version, skip the sausage and load up on extra veggies.
