
How to Make Halifax Donair Sauce – Sweet & Garlicky Perfection

Donair sauce is the stuff, if you like it. If you don't, grab some tzitziki. Don't judge the rest of us as we slather on the sweet garlicky goodness.
There’s a long-running debate: sweetened condensed milk or evaporated milk—which makes the best Donair sauce? We’re not here to pick sides. We’re giving you both recipes so you can decide for yourself.
(For the record, Lex usually goes for the sweetened condensed milk version because it’s faster.)
Halifax Donair Sauce with Sweetened Condensed Milk
Ingredients
- ⅔c sweetened condensed milk (300ml can)
- ¼c white vinegar
- 1t garlic powder
Instructions
- Whisk all ingredients together in a bowl until smooth.
- Cover and refrigerate for at least 1 hour (overnight is even better!).
Halifax Donair Sauce with Evaporated Milk
Ingredients
- 1 can evaporated milk (354ml can)
- 3/4 can white sugar (use the evaporated milk can for measuring)
- 3T white vinegar
- 1t garlic powder
Instructions
- Pour the evaporated milk into a mixing bowl.
- Using the same can, measure ¾ can of sugar and add it in.
- Sprinkle in garlic powder and whisk until the sugar is dissolved.
- Slowly add 2 tbsp vinegar, whisking gently about a dozen times. (Be careful—overmixing will make the sauce too runny! Weird but true)
- Cover and refrigerate for at least 1 hour (overnight is best).
- Before using, drain any liquid that has settled at the bottom—this gives you that thick, creamy Donair sauce texture.
How Long Does Donair Sauce Last?
Stored in an airtight container in the fridge, homemade Donair sauce lasts at least a month—if you don’t eat it all first!
